This is frustrating, but I've got to come clean. I have NO ABILITY WHATSOEVER to bake. I try and try and try ... and nothing ever comes out right. I don't understand. I follow the directions, carefully, I watch the time, monitor the progress, but still --- the goodies are always ... just wrong. So frustrating.

Last night I decided to make low carb chocolate chip cookies. I even had to ask The Targo to walk to Whole Foods to get more chocolate chips. As I was preparing the butter, Splenda and faux brown sugar, I discovered that our mixer was broken. So ... now what? Well, I didn't want to waste the butter, so I nuked it, just for a little bit, so I could mix it by hand. Okay then, I guess 30 seconds was too long because it was soup.

Whatever! I can make cookies! I'm smart (ish) and I know cookies. (I feel like Anthony Michael Hall in Breakfast Club ... dude, I can take shop.) Yeah, no. The cookies looked like pancakes. While they tasted GREAT, the second you looked at them, they fell apart.
So, my hopes of being the next Betty Crocker are so dashed. I do hope that someday I'll be able to just bake a cake. I mean, really. Why is it that hard?

Baking is hard. It took me a long time to be able to bake from scratch. Start with mixes and go from there.

I always use full fat, real sugar, etc. I find my stuff doesn't work out as well if I don't. :)

The temperature/consistency of the butter or shortening makes a big difference in the cookies!

I have been descent at baking, but I stick with tried and true recipes 99% of the time!

Baking is a science. No seriously. Cooking is an art, but baking is truly a science.

Keep trying. Just think of how much fun you'll have eating the disasters!
